Pulled Pork

    Prepare the Pork

    Place the pork shoulder in a slow cooker. Add chopped onion, minced garlic, paprika, brown sugar, salt, black pepper, cayenne pepper, and apple cider vinegar. Mix everything well.

    Cook the Pork

    Cover and cook on low for 8 hours, or until the pork is tender and easily pulled apart with a fork.

    Shred the Pork

    Once cooked, remove the pork from the slow cooker and shred it with two forks. Mix in the barbecue sauce.

Cornmeal-Fried Catfish

    Prepare the Breading

    In one bowl, mix cornmeal, flour, salt, and black pepper. In another bowl, beat the eggs and mix with buttermilk.

    Bread the Catfish

    Dip each catfish fillet into the egg mixture, then coat in the cornmeal mixture.

    Fry the Catfish

    In a large skillet, heat vegetable oil over medium-high heat. Fry the catfish fillets for about 4-5 minutes on each side, or until golden brown and cooked through.
