    Prepare the Jalapeños

    Slice the jalapeños in half lengthwise and remove the seeds and membranes for less heat.

    Make the Filling

    In a mixing bowl, combine the cream cheese, shredded cheddar cheese, and chopped green onions. Mix until well combined.

    Stuff the Jalapeños

    Fill each jalapeño half with the cheese mixture, ensuring they are generously filled.

    Wrap with Bacon

    Wrap each stuffed jalapeño with a half slice of bacon, securing it in place. You can use toothpicks if needed.

    Smoke the Armadillo Eggs

    Preheat your smoker to 225°F (107°C). Place the wrapped jalapeños in the smoker and smoke for about 1.5 to 2 hours, or until the bacon is crispy and the cheese is bubbling.

    Remove from the smoker and let cool slightly before serving with Cajun ranch dressing on the side.
