Method

Prepare Cod

  1. 1

    Coat the Cod

In a large bowl, combine flour, cornmeal, salt, and black pepper. Dredge each cod fillet in the mixture until well coated.

  2. 2

    Fry the Cod

Heat oil in a deep fryer or large pot over medium-high heat. Fry the cod fillets in batches until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels.

Prepare Fries

  1. 3

    Cut and Fry the Potatoes

Cut potatoes into fries. Heat oil in a separate fryer or large pot. Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Season with salt to taste.

Prepare Coleslaw

  1. 4

    Mix the Coleslaw

Shred the cabbage and carrots. In a bowl, combine shredded cabbage, carrots, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix well and refrigerate until serving.

Prepare Cornbread Muffins

  1. 5

    Mix the Batter

Preheat the oven to 400°F (200°C). In a bowl, mix cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together milk, eggs, and melted butter. Combine wet and dry ingredients.

  2. 6

    Bake Muffins

Pour the batter into greased muffin tins and bake for 15-20 minutes or until golden and a toothpick comes out clean.
