    Prepare the Acorn Squash

    Preheat the oven to 400°F (200°C). Cut the acorn squash in half, scoop out the seeds, and place the halves cut-side down on a baking sheet. Roast for about 30-40 minutes until tender.

    Make the Sformato Mixture

    Once the squash is cool enough to handle, scoop the flesh into a mixing bowl. Add the grated parmesan, heavy cream, eggs, melted butter, salt, black pepper, and nutmeg. Blend until smooth.

    Bake the Sformato

    Grease a baking dish with butter. Pour the squash mixture into the dish and smooth the top. Bake in the oven for 40-45 minutes until set and golden on top.

    Prepare the Chanterelle Conserva

    While the sformato is baking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute. Add chanterelle mushrooms, salt, and pepper, and cook until tender, about 5-7 minutes. Stir in lemon juice and chopped parsley.

    Serve

    Once the sformato is done, let it cool for a few minutes before slicing. Serve warm with the chanterelle conserva on top.
