Method

Preparing the Fish

  1. 1

    Season the Snapper

In a bowl, mix olive oil, salt, black pepper, and lemon juice. Coat the red snapper fillets with the mixture and let them marinate for 20 minutes.

  2. 2

    Cook the Fish

Preheat the grill or a skillet over medium-high heat. Cook the marinated snapper fillets for about 4-5 minutes on each side or until the fish flakes easily with a fork.

Making the Artichoke Mash

  1. 3

    Blend Ingredients

In a food processor, combine canned artichoke hearts, cream cheese, garlic powder, lemon zest, salt, and black pepper. Blend until smooth and creamy.

  2. 4

    Heat the Mash

Transfer the artichoke mash to a saucepan and gently heat over low heat until warmed through.

Preparing the Salsa Verde

  1. 5

    Combine Ingredients

In a bowl, combine fresh parsley, capers, minced garlic, olive oil, red wine vinegar, salt, and black pepper. Mix well to combine.
