    Make the Cappelletti Dough

    In a large bowl, mix flour and salt. Make a well in the center and add the egg. Gradually mix in flour until a dough forms. Knead for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Filling

    Sauté spinach in olive oil until wilted. Let it cool, then mix with ricotta, grated Parmesan, salt, and pepper.

    Roll Out the Dough

    On a floured surface, roll out the dough thinly. Cut into circles about 8 cm in diameter.

    Fill and Shape the Cappelletti

    Place a teaspoon of spinach filling in the center of each circle. Fold over to form a semi-circle and pinch to seal. Then, fold the ends to create a little hat shape.

    Prepare for Baking

    Preheat the oven to 180°C (350°F). In a baking dish, spread a layer of tomato sauce on the bottom. Place the cappelletti on top, then layer the smashed spicy meatballs and top with remaining tomato sauce.

    Add Cheese and Bake

    Sprinkle shredded mozzarella cheese over the top. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
