Preparation of Artichokes

Prepare the Artichokes
Trim the stems of the artichokes and remove the outer leaves until you reach the tender ones. Cut off about an inch from the top of each artichoke, and then use a paring knife to trim the rough edges. Rub the cut areas with lemon to prevent browning.

Boil the Artichokes
In a large pot, bring salted water to a boil. Add the prepared artichokes and cook for about 15-20 minutes, or until tender. Once cooked, remove them from the water and allow to cool.

Deep Fry the Artichokes
In a deep frying pan, heat olive oil over medium-high heat. Once the oil is hot, fry the artichokes upside down for about 5-7 minutes or until they turn golden brown and crispy.

Serve
Drain the fried artichokes on paper towels, sprinkle with salt, and serve hot with grated Pecorino Romano on top.
