Preparation Steps
Prepare the Chicken
In a large pot, place the whole chicken and cover it with water. Add salt, garlic cloves, and ginger. Bring to a boil, then reduce heat and let simmer for about 45 minutes, or until the chicken is cooked through.
Cook the Rice
Remove the chicken and set aside to cool. Strain the broth and reserve it. In a separate pot, add the jasmine rice and 4 cups of the chicken broth. Bring to a boil, then reduce heat, cover, and let it simmer for 15 minutes or until the rice is cooked.
Serve
Once the chicken has cooled, chop it into serving pieces. Plate the rice, topped with the chicken, and serve with sliced cucumbers, cilantro, and Nong's Sauce on the side. Optionally, serve with a side of chicken broth as soup.
