Preparing Yuca Fries

    Peel and Cut Yuca

    Peel the yuca using a vegetable peeler, removing the tough outer skin. Cut the yuca into fries, about 1/2 inch thick.

    Boil Yuca

    In a large pot, bring water to a boil. Add the cut yuca and boil for about 15-20 minutes, or until fork-tender. Drain and let cool.

    Season Yuca

    Once cooled, toss the boiled yuca with chicken seasoning until evenly coated.

    Fry Yuca

    In a deep pot, heat vegetable oil over medium-high heat to about 350°F (175°C). Fry the yuca in batches for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

Making Avocado Aioli

    Prepare Ingredients

    In a food processor, combine ripe avocado, mayonnaise, lime juice, garlic, and salt.

    Blend

    Blend until smooth and creamy. Taste and adjust seasoning if necessary.

Assembling the Dish

    Garnish Yuca Fries

    Once the yuca fries are fried and crispy, transfer to a serving platter. Crumble queso fresco on top, and sprinkle with chopped cilantro and sliced scallions.

    Serve

    Serve the yuca fries hot with the avocado aioli on the side for dipping.
