Walleye Fillets Preparation

Coat the Walleye
In a shallow bowl, combine flour, cornmeal, salt, and black pepper. In another bowl, whisk together the egg and milk. Dip each walleye fillet first into the egg mixture, then dredge in the flour mixture until well-coated.

Fry the Walleye
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated walleye fillets and cook for 3-4 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Mix the Spicy Mayo
In a small bowl, combine mayonnaise, sriracha, and lemon juice. Mix well until fully incorporated.
Napa Cabbage Slaw Preparation

Prepare the Slaw
In a large bowl, combine shredded napa cabbage, grated carrot, and chopped green onions. In a separate small bowl, whisk together rice vinegar, sesame oil, and salt. Pour the dressing over the cabbage mixture and toss to combine.

Assemble the Sandwich
On each bun, spread a generous amount of spicy mayo. Place a lettuce leaf, followed by a fried walleye fillet, a spoonful of napa cabbage slaw, and a slice of tomato. Drizzle with green garlic dressing before closing the sandwich.
