Turkey Burgers

    Prepare the Turkey Patties

    In a mixing bowl, combine the ground turkey, garlic powder, onion powder, salt, and black pepper. Mix until just combined. Form the mixture into 4 equal patties.

    Cook the Patties

    Heat olive oil in a skillet over medium heat. Cook the turkey patties for about 5-7 minutes on each side or until they are cooked through and the internal temperature reaches 165°F (75°C).

    Toast the Buns

    In the same skillet, lightly toast the burger buns until golden brown.

Herb Aioli

    Make the Aioli

    In a small bowl, whisk together the mayonnaise, chopped parsley, chopped dill, minced garlic, lemon juice, salt, and black pepper. Set aside.

Sweet & Sour Onion Jam

    Cook the Onions

    In a pan, heat olive oil over medium heat. Add the sliced onions and cook until they are soft and translucent, about 10 minutes.

    Add Sugar and Vinegar

    Stir in the brown sugar, apple cider vinegar, and salt. Cook for another 15-20 minutes, stirring occasionally, until the mixture thickens into a jam-like consistency. Remove from heat and let cool.

Shoestring Potatoes

    Prepare the Potatoes

    Soak the shoestring potatoes in cold water for 30 minutes to remove excess starch, then drain and pat dry.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C). Fry the shoestring potatoes in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels. Season with salt to taste.

Assembly

    Assemble the Burger

    On the bottom half of each toasted bun, spread a generous amount of herb aioli. Place the turkey patty on top, followed by a spoonful of sweet & sour onion jam and a handful of fresh arugula. Top with the other half of the bun.

    Serve

    Serve the turkey burgers with a side of crispy shoestring potatoes.
