Egg and Meat Filling

Toppings

Chipotle Crema

Method

Prepare Tostada Base

  1. 1

    Fry Corn Tortillas

In a skillet over medium heat, lightly fry the corn tortillas until they are crisp and golden brown, about 2-3 minutes on each side. Remove and set aside on a paper towel to drain excess oil.

Make Egg and Meat Filling

  1. 2

    Cook Bacon

In the same skillet, add the bacon slices and cook until crispy. Remove from the skillet and chop into small pieces.

  2. 3

    Cook Breakfast Sausage

In the bacon drippings, add the breakfast sausage links and cook until browned and cooked through. Remove from the skillet and slice into small rounds.

  3. 4

    Scramble Eggs

Whisk the eggs in a bowl, then pour them into the skillet and scramble until fully cooked. Add the chopped bacon and sausage into the scrambled eggs, mixing well.

Prepare Toppings

  1. 5

    Chop Vegetables

Finely chop the jalapeño (remove seeds for less heat), red onion, and cilantro. Slice the avocado in half, remove the pit, and scoop the flesh out with a spoon, then slice it.

Make Chipotle Crema

  1. 6

    Mix Chipotle Crema

In a small bowl, combine the sour cream, chipotle in adobo sauce, and lime juice. Mix until smooth and well combined.

Assemble Tostada

  1. 7

    Layer Ingredients

On each crispy corn tortilla, layer a generous portion of the scrambled egg and meat mixture. Top with sliced avocado, chopped jalapeño, red onion, cilantro, and green onion. Drizzle with chipotle crema before serving.
