    Sauté the Aromatics

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 cup of chopped onion and sauté until translucent, about 5 minutes. Stir in 3 tablespoons of minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Tomatoes and Broth

    Pour in 2 cups of canned whole tomatoes (including juice) and 2 cups of vegetable broth. Stir to combine.

    Season the Soup

    Add 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of sugar. Stir everything together and bring the mixture to a boil.

    Simmer

    Reduce the heat and let the soup simmer for 20-25 minutes, allowing the flavors to meld.

    Blend the Soup

    After simmering, remove the pot from heat. Add 1 cup of fresh basil leaves and use an immersion blender to purée the soup until smooth. Alternatively, you can transfer the soup to a blender in batches.

    Prepare the Croutons

    Preheat the oven to 400°F (200°C). In a bowl, toss 3 cups of cubed bread with 2 tablespoons of olive oil, 1 teaspoon of garlic powder, and 1 teaspoon of salt until evenly coated.

    Bake the Croutons

    Spread the coated bread cubes in a single layer on a baking sheet. Bake in the preheated oven for about 10-15 minutes, or until golden brown and crispy, stirring halfway through.

Basil Oil Directions

    Make the Basil Oil

    In a blender, combine 1 cup of fresh basil leaves and 1 cup of olive oil. Blend until smooth. Season with salt to taste.
