    Sauté the Vegetables

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Add Garlic and Other Vegetables

    Stir in the minced garlic, diced carrots, and diced celery. Cook for an additional 5 minutes until the vegetables are tender.

    Add Tomatoes and Broth

    Add the crushed tomatoes and vegetable broth to the pot. Stir to combine.

    Season the Soup

    Season with salt, black pepper, and dried basil. Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer to a blender in batches.

    Finish the Soup

    Stir in the chopped fresh basil leaves and lemon juice. Adjust seasoning if necessary.

Croutons

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Prepare Croutons

    In a bowl, toss the cubed bread with 2 tablespoons of olive oil, garlic powder, and salt until evenly coated.

    Bake Croutons

    Spread the bread cubes onto a baking sheet. Bake for about 15-20 minutes, or until golden brown, tossing halfway through for even crispiness.

Basil Oil

    Blend Ingredients

    In a blender, combine 1 cup of olive oil, 1 cup of fresh basil leaves, and 1 teaspoon of salt.

    Strain the Oil

    Blend until smooth, then strain through a fine mesh sieve or cheesecloth into a jar. Discard the solids.
