Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips, about 1/4 inch thick.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches, frying for about 4-6 minutes or until golden brown. Use a slotted spoon to remove them and drain on paper towels.

While the fries are still hot, sprinkle them with salt and black pepper to taste.

Mix the Spread
In a medium bowl, combine the mayonnaise, ketchup, garlic powder, paprika, and lemon juice. Stir until well blended.

Taste the spread and adjust the seasoning if necessary, adding more garlic powder or paprika according to your preference.
