Prepare the Glass
Select a lowball glass or an old-fashioned glass. Place the glass in the freezer for a few minutes to chill.

Mix the Sugar and Bitters
In a mixing glass, add 1 teaspoon of Demerara sugar and 2 dashes of Angostura bitters. Muddle them together until the sugar has dissolved.

Add Ice
Fill the mixing glass with ice cubes and stir gently for about 30 seconds until well chilled.

Strain and Serve
Strain the mixture into the chilled lowball glass over a large ice cube or several smaller ones.

Garnish
Express the oils from a piece of orange peel over the drink and then drop it into the glass as a garnish. You can also garnish with a cherry if desired.
