Method

Walleye Preparation

    Prepare the Walleye

    Preheat the oven to 400°F (200°C). Season the walleye fillets with salt and black pepper.

    Bread the Fish

    Dredge each walleye fillet in flour, shaking off the excess. Dip into beaten eggs, then coat with panko breadcrumbs.

    Cook the Walleye

    Heat olive oil in a large skillet over medium-high heat. Add the breaded walleye fillets and cook until golden brown, about 3-4 minutes per side. Transfer to a baking sheet and finish cooking in the oven for 10 minutes.

Mashed Potatoes Preparation

    Boil the Potatoes

    Peel and cut the russet potatoes into quarters. Place in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Miso Creamed Spinach Preparation

    Sauté the Spinach

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add fresh spinach and cook until wilted.

    Prepare the Creamed Spinach

    Stir in miso paste and heavy cream. Cook until well combined and heated through, about 3-5 minutes.

Assembly and Serving

    Plate the Dish

    On each plate, serve a portion of mashed potatoes, top with a walleye fillet, and spoon the miso creamed spinach on the side.

    Garnish

    Sprinkle sliced almonds on top of the spinach and serve with lemon wedges on the side for squeezing.
