Pizza Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Dough Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and extra virgin olive oil.

Knead the Dough
Mix the ingredients together until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.
Pizza Assembly and Baking

Preheat Oven
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.

Shape the Pizza
Once the dough has risen, punch it down to release air. Roll it out on a floured surface into a 12-inch circle. Transfer to a pizza peel or baking sheet.

Add Sauce and Cheese
Spread the red sauce evenly over the dough, leaving a small border around the edges. Tear the fresh mozzarella into pieces and distribute them on top of the sauce.

Bake the Pizza
Carefully slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake for about 10-12 minutes, or until the crust is golden and the cheese is bubbling.

Add Basil and Olive Oil
Remove the pizza from the oven and immediately top it with fresh basil leaves. Drizzle with extra virgin olive oil.
