Fritters Preparation

    Prepare Cauliflower

    Steam the cauliflower florets for about 10 minutes until tender. Drain and let cool slightly.

    Mix Ingredients

    In a large bowl, mash the steamed cauliflower with a fork or potato masher. Add the flour, grated parmesan, eggs, green onions, minced garlic, salt, and black pepper. Mix until well combined.

    Form Fritters

    Using your hands, form the mixture into small patties, about 2 inches in diameter.

    Cook Fritters

    In a large skillet, heat olive oil over medium heat. Add the fritters in batches, cooking for about 4-5 minutes on each side until golden brown. Transfer to a paper towel-lined plate to drain excess oil.

Oyster Mushroom Cream Sauce Preparation

    Sauté Mushrooms

    In a saucepan, melt the butter over medium heat. Add the chopped oyster mushrooms and minced garlic. Sauté for about 5-7 minutes until the mushrooms are tender and golden.

    Add Cream

    Pour in the heavy cream, stirring to combine. Allow the sauce to simmer for about 5 minutes until it thickens slightly. Season with salt and black pepper to taste. Stir in the chopped parsley before serving.

Assembly

    Plate the Dish

    On a serving platter, place a bed of arugula. Top with the cauliflower fritters and drizzle with the oyster mushroom cream sauce. Sprinkle additional grated parmesan on top before serving.
