Beef Preparation

Method

Beef Preparation

  1. 1

    Sear the Beef

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the beef on all sides until browned, about 5-7 minutes. Remove the beef and set aside.

  2. 2

    Sauté Aromatics

In the same pot, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

  3. 3

    Braise the Beef

Return the beef to the pot. Add the beef broth, cumin, chili powder, and additional salt if needed. Bring to a simmer, then cover and reduce the heat to low. Let it braise for 2-3 hours until the beef is tender and can be easily shredded with a fork.

  4. 4

    Shred the Beef

Once the beef is tender, remove it from the pot and let it cool slightly. Shred the beef using two forks and return it to the pot, mixing it with the remaining juices.

Taco Assembly

  1. 5

    Prepare the Tortillas

Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are soft and pliable.

  2. 6

    Assemble the Tacos

Place a generous amount of the shredded beef mixture in the center of each tortilla. Top with crumbled queso fresco, chopped cilantro, and green onions.

  3. 7

    Add Sauce and Serve

Drizzle taco sauce over the top and serve with lime wedges on the side for squeezing over the tacos.
