Prepare the Beef
Season the beef chuck roast with salt and black pepper on all sides. Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side. Remove and set aside.

Sauté Aromatics
In the same pot, add the remaining tablespoon of olive oil. Add the shaved garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Cook the Pasta
During the last 15 minutes of braising, cook the radiatori pasta according to package instructions in a separate pot. Drain and set aside.

Plate the Dish
Serve the braised beef mixture over the cooked radiatori pasta. Top with freshly grated Parmesan cheese. Enjoy!
