Prepare the Shrimp
In a bowl, combine the flour, cornmeal, Cajun seasoning, salt, and black pepper. In another bowl, pour the buttermilk. Dip each shrimp first into the buttermilk, then dredge in the flour mixture, ensuring they are well coated.

Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the coated shrimp in batches. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Poboys
Slice the French bread or hoagie rolls lengthwise. Spread a generous layer of mayonnaise on each side. Layer with shredded lettuce, fried shrimp, and sliced tomatoes. Drizzle with hot sauce to taste.

Close the sandwich and serve immediately, either whole or cut in half.
