    Prepare the Catfish

    Rinse the catfish fillets under cold water and pat them dry. Season both sides with blackening seasoning.

    Fry the Catfish

    In a large skillet, heat vegetable oil over medium-high heat. Once the oil is hot, add the seasoned catfish fillets and cook for about 3-4 minutes on each side or until they are blackened and cooked through. Remove from the skillet and set aside.

    Prepare the Oysters

    Rinse the oysters and coat them lightly in cornmeal. In the same skillet, add a little more oil if needed and fry the oysters for 2-3 minutes until golden brown. Remove and drain on paper towels.

    Assemble the Po Boys

    Slice the French bread/sub rolls lengthwise. Spread mayonnaise on both sides of the bread. Layer with lettuce, sliced tomato, blackened catfish, and fried oysters. Drizzle with hot sauce to taste.

    Close the sandwich and serve immediately while hot.
