Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Yam
Peel the yamaimo and cut it into 1-inch thick slices or wedges.

Season the Yam
In a large bowl, toss the yam slices with olive oil, salt, and black pepper until evenly coated.

Roast the Yam
Spread the yam slices on a baking sheet in a single layer and roast for 25-30 minutes, or until golden brown and tender, turning halfway through.
Garnish

Prepare the Herbs
While the yam is roasting, rinse the fresh basil and mint leaves under cold water and pat them dry with a paper towel.

Chop the Herbs
Chop the basil and mint leaves roughly and set them aside for garnish.
Yellow Curry Ponzu

Mix the Ponzu Sauce
In a small bowl, combine soy sauce, rice vinegar, yellow curry powder, lemon juice, and mirin. Whisk until well combined.

Adjust to Taste
Taste the ponzu sauce and adjust seasoning if necessary, adding more soy sauce or lemon juice as needed.
Final Assembly

Plate the Dish
Once the yamaimo is roasted, remove it from the oven and place it on a serving platter.

Sprinkle the chopped basil and mint over the roasted yamaimo.

Drizzle the yellow curry ponzu sauce over the dish just before serving.
