Steak Preparation

Season the Steak
Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper. Let them sit at room temperature for about 30 minutes before cooking.

Sear the Steak
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks to the skillet. Sear for about 4-5 minutes on one side until a nice crust forms.

Flip and Add Flavor
Flip the steaks and add the butter, garlic cloves, and thyme to the skillet. Cook for an additional 4-5 minutes for medium-rare, spooning the melted butter over the steaks as they cook.

Rest the Steaks
Remove the steaks from the skillet and let them rest on a cutting board for at least 5 minutes before slicing.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin fries (about 1/4 inch thick). Rinse the fries in cold water to remove excess starch.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to an hour. This helps to make them crispier when frying.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 325°F (160°C).

Fry the Potatoes (First Fry)
Drain the soaked fries and dry them thoroughly with paper towels. Fry the potatoes in batches for about 3-4 minutes until they are soft but not browned. Remove and drain on paper towels.

Fry the Potatoes (Second Fry)
Increase the oil temperature to 375°F (190°C) and fry the potatoes again in batches for about 3-4 minutes until they are golden brown and crispy. Drain on paper towels and season with salt.
