Crab Preparation

Clean the Crab
Rinse the soft shell crabs under cold water and remove the gills. Pat them dry with paper towels.

Prepare the Breading
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well.

Bread the Crab
Dredge each soft shell crab in the flour mixture, ensuring they are well coated. Shake off any excess flour.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Crab
Fry the crabs in batches for about 3-4 minutes until they are golden brown and crispy. Remove and drain on paper towels.
Apple and Cilantro Preparation

Slice the Apple
Core and thinly slice the green apple. Set aside.

Chop the Cilantro
Finely chop the fresh cilantro. Set aside.
Nuoc Châm Sauce Preparation

Combine Ingredients
In a small bowl, whisk together the fish sauce, lime juice, sugar, water, and chili garlic sauce until the sugar is dissolved.
Assembly

Assemble the Roll
On a serving plate, arrange the crispy soft shell crab, sprinkle with sliced green apple and chopped cilantro.

Drizzle the nuoc châm sauce over the crab roll or serve on the side for dipping.
