Preparation

    Prepare Watermelon Rind

    Carefully peel the green skin off the watermelon rind and cut the white part into small cubes. You should have around 100g of watermelon rind prepared.

    Prepare Raspberries

    Rinse the fresh tart raspberries under cold water. Pat them dry with a paper towel. Set aside.

Mixing the Drink

    Combine Ingredients

    In a cocktail shaker, add the prepared watermelon rind cubes and fresh raspberries. Muddle them together gently to release their juices.

    Add Ginjo Genshu

    Pour in 180ml of Ginjo Genshu sake into the shaker. Fill the shaker with ice and secure the lid.

    Shake Well

    Shake the cocktail shaker vigorously for about 15-20 seconds until well chilled.

    Strain and Serve

    Strain the mixture into a chilled glass, ensuring that the solids do not enter the glass.

Garnishing

    Garnish the drink with a few mint leaves and a lime wedge on the rim of the glass.
