Preparation of String Beans

    Wash the string beans thoroughly under running water. Trim the ends of each bean to remove any tough parts.

Batter Preparation

    Mix the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually add cold water while whisking until you achieve a smooth, lump-free batter. The consistency should be similar to that of pancake batter.

Frying

    Heat the Oil

    In a deep pan or wok, heat the vegetable oil over medium-high heat until it reaches approximately 180°C (350°F). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it’s ready.

    Fry the String Beans

    Dip a few string beans into the batter, ensuring they are fully coated. Carefully place them in the hot oil, frying in small batches to avoid overcrowding. Fry for about 3-4 minutes, or until they turn golden brown and crispy.

    Using a slotted spoon, remove the fried string beans from the oil and place them on a plate lined with paper towels to absorb excess oil.
