Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine the olive oil, lemon juice, minced garlic, salt, and black pepper. Mix well. Place the salmon fillets in the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).

  3. 3

    Grill the Salmon

Once the grill is hot, remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Season the Vegetables

In a large bowl, combine the asparagus, cherry tomatoes, zucchini, and red bell pepper. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss to ensure the vegetables are evenly coated.

  2. 5

    Grill the Vegetables

Using a grill basket or aluminum foil, place the seasoned vegetables on the grill alongside the salmon. Grill for about 8-10 minutes, stirring occasionally, until they are tender and slightly charred.

Serving

  1. 6

    Plate the Dish

Once both the salmon and vegetables are grilled, remove them from the grill. Serve the grilled salmon alongside the seasonal vegetables, and garnish with additional lemon slices if desired.
