Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with cocoa powder to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) or microwave in 30-second intervals until melted. Stir until smooth.

  3. 3

    Mix Sugar and Eggs

In a mixing bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously. Add the vanilla extract and a pinch of salt, mixing until fully incorporated.

  5. 5

    Add Flour

Sift in the all-purpose flour and gently fold it into the batter until just combined. Be careful not to overmix.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  7. 7

    Bake

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft.

Serving

  1. 8

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cakes. Invert each ramekin onto a plate and gently lift off. Dust with powdered sugar, and serve with vanilla ice cream and fresh berries if desired.
