    Prepare the Ingredients

    Trim the coppa and season with salt and black pepper. Shuck the corn and remove kernels from the cob. Peel the pearl onions and chop the garlic.

    Sear the Coppa

    Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. When hot, add the coppa and sear for about 4-5 minutes on each side until a nice crust forms. Remove from the skillet and let it rest.

    Sauté the Vegetables

    In the same skillet, add the remaining olive oil, garlic, and pearl onions. Sauté for about 3 minutes until the onions are translucent. Then, add the corn kernels and swiss chard. Cook for an additional 5-7 minutes until the chard is wilted and the corn is tender.

    Combine and Serve

    Slice the rested coppa and serve it over the sautéed corn and swiss chard mixture. Drizzle with lemon juice and adjust seasoning with salt and pepper to taste.
