    Prepare the Steak

    Season the prime sirloin steaks with salt and black pepper on both sides. Let them sit at room temperature for about 30 minutes.

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant. Add the chanterelle mushrooms and cook for about 5 minutes until they soften.

    Add Peppers and Broccolini

    Add the shishito peppers and smoked broccolini to the skillet. Cook for another 5-7 minutes until the peppers blister and the broccolini is heated through. Season with salt and pepper to taste, then remove from heat and set aside.

    Cook the Steak

    In another skillet, heat the remaining tablespoon of olive oil over high heat. Add the seasoned prime sirloin steaks and sear for 4-5 minutes on each side for medium-rare, or until your desired doneness. During the last minute of cooking, add fresh thyme to the skillet.

    Rest and Serve

    Remove the steaks from the skillet and let them rest for 5 minutes. Slice the steak and serve it alongside the sautéed chanterelle mushrooms, shishito peppers, and smoked broccolini.
