Melt Chocolate
Preheat your oven to 375°F (190°C). In a medium saucepan, melt the dark chocolate and unsalted butter over low heat, stirring until smooth. Remove from heat and let cool slightly.

Prepare Egg Mixture
In a separate bowl, whisk together the granulated sugar and egg yolks until pale and fluffy. Add in the vanilla extract and the cooled chocolate mixture, stirring until well combined.

Bake
Place the ramekins in the preheated oven and bake for approximately 12-15 minutes, or until the soufflés have risen and have a soft, slightly wobbly center.

Remove from the oven and serve immediately, optionally dusted with powdered sugar or accompanied by whipped cream.
