Grapefruit Salad

Method

Preparing the Branzino

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Season the Fish

Rinse the Branzino under cold water and pat dry. Rub the fish with olive oil, salt, and black pepper, ensuring the seasoning is inside the cavity as well.

  3. 3

    Roast the Fish

Place the seasoned Branzino on a baking tray lined with parchment paper. Roast in the oven for 20-25 minutes, or until the flesh is opaque and flakes easily with a fork.

Making the Sauces

  1. 4

Prepare the Fermented Garlic Honey Sauce

In a small bowl, mix the fermented garlic, honey, and apple cider vinegar until well combined.

  2. 5

Prepare the Walnut & Urfa Mint Topping

In another bowl, combine the chopped walnuts, Urfa pepper, and fresh mint. Set aside.

Preparing the Grapefruit Salad

  1. 6

    Combine Salad Ingredients

In a salad bowl, combine the grapefruit segments, red onion, olive oil, salt, and black pepper. Toss gently to combine.

Serving

  1. 7

    Plate the Dish

Once the Branzino is cooked, remove it from the oven and let it rest for a few minutes. Serve the fish topped with the fermented garlic honey sauce, walnut & Urfa mint topping, alongside the grapefruit salad.
