Cake and Soaking Mixture

Method

Preparation

  1. 1

    Bake the Cake

Preheat the oven to 350°F (175°C). In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk together eggs, milk, oil, and vanilla. Gradually add the wet ingredients to the dry ingredients until just combined. Pour the batter into a greased 9x13 inch baking dish and bake for 30-35 minutes or until a toothpick comes out clean. Let cool.

  2. 2

    Prepare the Soaking Mixture

In a bowl, whisk together the sweetened condensed milk, evaporated milk, and whole milk. Once the cake has cooled, poke holes all over the surface with a fork and pour the milk mixture evenly over the cake. Allow it to soak for at least 1 hour, preferably overnight.

  3. 3

    Prepare the Chocolate Filo

Preheat the oven to 375°F (190°C). Lay out the chocolate filo sheets on a clean surface and brush with melted butter. Stack and fold them as desired, then cut into squares. Bake until crispy, about 10-12 minutes. Let cool.

  4. 4

    Make the Chocolate Ganache

In a saucepan, heat 1 cup of heavy cream until just simmering. Remove from heat and add 8 oz of chopped dark chocolate. Let sit for 5 minutes, then stir until smooth. Allow to cool slightly.

  5. 5

    Assemble the Dessert

Cut the soaked cake into squares. Serve the cake squares on plates, drizzled with chocolate ganache, and topped with crispy chocolate filo.
