Sear the Short Ribs
Preheat your oven to 325°F (163°C). In a large, heavy-bottomed pot, heat the olive oil over medium-high heat. Season the short ribs with salt and pepper. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove the ribs from the pot and set aside.

Deglaze and Braise
Pour in the red wine, scraping up any browned bits from the bottom of the pot. Bring to a boil and let it reduce by half, about 5-7 minutes. Add the beef broth, canned diced tomatoes, and the seared short ribs back into the pot. Bring to a simmer, cover, and transfer to the oven. Braise for 2.5 to 3 hours, or until the short ribs are tender.

Cook the Orzo
In the last 15 minutes of cooking the short ribs, bring a separate pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and set aside.

Serve
Once the short ribs are tender, remove them from the oven. Stir in the cooked orzo and adjust seasoning with salt and pepper. Serve topped with crumbled feta cheese and fresh parsley.
