Prepare the Roasted Tomatoes
Preheat the oven to 400°F (200°C). On a baking sheet, toss the halved cherry tomatoes with 1 tablespoon of olive oil, minced garlic, salt, and black pepper. Roast in the oven for 15-20 minutes until the tomatoes are blistered and soft.

Cook the Shrimp
In a large skillet over medium heat, add the remaining 2 tablespoons of olive oil. Once hot, add the shrimp, lemon juice, and chopped dill. Season with salt and black pepper. Cook for 3-5 minutes, stirring occasionally, until the shrimp are pink and cooked through.

Whip the Feta
In a small bowl, combine the crumbled feta cheese with a splash of olive oil and a tablespoon of water. Use a fork or a hand mixer to whip until creamy and smooth.

Combine and Serve
Once the tomatoes are roasted and the shrimp are cooked, gently combine them in the skillet. Serve the shrimp and tomatoes on a plate topped with the whipped feta and a sprinkle of additional dill if desired.
