Roast the Cauliflower
Preheat the oven to 425°F (220°C). Cut the cauliflower into florets and toss with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown and tender.

Fry the Capers
In a small pan, heat a tablespoon of olive oil over medium heat. Add the capers and fry for 2-3 minutes until crispy. Remove and drain on paper towels.

Sauté the Sage
In the same pan, add a little more oil if necessary, and sauté the sage leaves for 1-2 minutes until crispy. Remove and drain on paper towels.

Assemble the Dish
On a serving platter, spread the garlic labneh. Top with roasted cauliflower, fried capers, and crispy sage leaves. Drizzle with additional olive oil if desired.
