Prepare the Cheese
Cut the kasseri cheese into 1-inch thick slices and pat dry with a paper towel.

Heat the Pan
In a non-stick skillet, heat the olive oil over medium-high heat until shimmering.

Fry the Cheese
Add the kasseri cheese slices to the skillet and cook until golden brown on both sides, about 2-3 minutes per side.

Flambé the Cheese
Once the cheese is browned, carefully pour the ouzo over the cheese and immediately ignite with a long lighter or match. Allow the flames to subside.

Serve
Transfer the flaming saganaki to a serving platter, sprinkle with salt and black pepper, and garnish with chopped parsley. Serve with sourdough crisps and walnut shallot jam on the side. Add lemon wedges for squeezing over the cheese.
