Prepare the Roasted Garlic Tomato Sauce
In a saucepan, heat olive oil over medium heat. Add roasted garlic and sauté for 1-2 minutes until fragrant. Add crushed tomatoes and oregano. Simmer for 15 minutes, stirring occasionally. Season with salt and pepper to taste. Keep warm.

Prepare the Calamari
In a bowl, whisk together flour, cornstarch, salt, black pepper, and paprika. In another bowl, beat the egg and mix with buttermilk. Dip calamari rings into the buttermilk mixture, then dredge in the flour mixture, ensuring they are well coated.

Fry the Calamari
Heat vegetable oil in a deep pan over medium-high heat. Once hot, carefully add the calamari in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Serve the crispy calamari hot, garnished with pepperoncini peppers and fresh basil leaves, alongside the roasted garlic tomato sauce for dipping.
