Cooking Instructions

  1. 1

    Prepare the Pasta

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

  2. 2

    Cook the Clams

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped jalapeno, and sauté until fragrant, about 2 minutes.

  3. 3

    Add Clams and Wine

Add the Manila clams to the skillet and pour in the white wine. Cover the skillet to steam the clams for about 5-7 minutes, until they open up. Discard any clams that do not open.

  4. 4

    Combine with Pasta

Add the cooked spaghetti to the skillet along with the reserved pasta water and chopped scallions. Toss everything together and season with salt and black pepper to taste.

  5. 5

    Serve

Remove from heat and stir in the chopped parsley. Serve hot, garnished with additional parsley if desired.
