Tomato Malt Vinegar Aioli
Preparing the Fries
1. Cutting the Potatoes
Wash and peel the Kennebec potatoes. Cut them into even-sized fries, about 1/4 inch thick.
2. Soaking the Fries
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.
3. Drying the Fries
Drain the soaked fries and pat them dry with a clean kitchen towel.
4. Frying the Fries
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown, about 4-5 minutes. Remove and drain on paper towels. Sprinkle with salt.
Making the Aioli
5. Mixing the Ingredients
In a bowl, combine mayonnaise, tomato paste, malt vinegar, minced garlic, black pepper, and salt. Whisk until smooth and well combined.
6. Chilling
Cover and refrigerate the aioli for at least 30 minutes to allow the flavors to meld.
