Prepare the Halibut

Preheat your oven to 375°F (190°C). Season the Pacific halibut fillets with salt, black pepper, and lemon juice. Place them in a baking dish and drizzle with olive oil.

Bake the Halibut

Bake the halibut in the preheated oven for approximately 15-20 minutes or until the fish flakes easily with a fork.

Sauté the Leeks and Prawns

In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced leeks and sauté until softened, about 5 minutes. Then, add the sidestripe prawns and cook until they turn pink, about 3-4 minutes.

Prepare the Watercress

Once the prawns are cooked, add the watercress to the skillet and sauté for an additional minute until just wilted. Season with salt and black pepper to taste.

Plate the Dish

Ladle the lobster bisque into bowls, place the baked halibut on top, and garnish with the sautéed leeks, prawns, and watercress. Serve immediately.
