Prepare the Leeks

Trim the leeks and slice them thinly. Rinse and dry them thoroughly. Heat olive oil in a skillet over medium heat and fry the leeks until golden brown and crispy. Drain on paper towels and set aside.

Prepare the Sauce

In a saucepan, combine red wine and beef stock. Bring to a boil and reduce by half. Add green peppercorns and heavy cream, then simmer until thickened. Stir in butter, and season with salt and black pepper to taste.

Grill the Steak

Preheat a grill to high heat. Season the top sirloin steak with salt and black pepper. Grill the steak for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Let rest for a few minutes before slicing.

Serve

Slice the grilled steak and plate it. Drizzle the green peppercorn jus over the top and garnish with crispy fried leeks. Shave black truffle over the dish before serving.
