Orange, dill, whipped feta, everything crumble
Preheat oven to 400°F (200°C). Wrap beets in aluminum foil and roast for about 45 minutes to 1 hour, or until tender. Allow to cool, then peel and cut into cubes.
Peel and segment the oranges, removing any pith. Set aside the segments for assembly.
In a food processor, combine the feta cheese, cream cheese, olive oil, and lemon juice. Blend until smooth and creamy. Adjust seasoning with salt and pepper to taste.
In a bowl, mix panko breadcrumbs, sesame seeds, garlic powder, onion powder, salt, and black pepper. Spread on a baking sheet and toast in the oven for about 5-7 minutes, until golden and crispy.
In a large bowl, combine the roasted beets, orange segments, and fresh dill. Drizzle with the whipped feta and sprinkle the everything crumble on top. Serve immediately.
