Method

Cake Preparation

    Preheat Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.

    Mix Wet Ingredients

    In another bowl, whisk together the eggs, oil, vanilla extract, and rum.

    Combine Ingredients

    Add the wet ingredients to the dry ingredients and mix until just combined.

    Add Carrots and Pineapple

    Fold in the grated carrots and crushed pineapple.

    Bake

    Pour the batter evenly into the prepared cake pans.

    Check for Doneness

    Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

    Cool Cakes

    Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Frosting Preparation

    Beat Cream Cheese and Butter

    In a large bowl, beat the cream cheese and butter together until smooth and creamy.

    Gradually add the powdered sugar and vanilla extract, beating until well combined.

    Once cakes are completely cooled, frost the top of one cake layer, place the second layer on top, and frost the top and sides of the cake.

Candied Carrots Preparation

    Add the sliced carrots and simmer for about 10 minutes until tender.
