Prepare Ragu

Make the Ragu Sauce
In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent. Add the ground beef and pork, cooking until browned. Stir in the crushed tomatoes, red wine, chopped porcini mushrooms, salt, pepper, and oregano. Simmer for 30 minutes, then stir in fresh basil.
Prepare Pomodoro Sauce

Make the Pomodoro Sauce
In a saucepan, combine whole canned tomatoes, basil leaves, salt, and pepper. Cook over low heat for 20 minutes, breaking up the tomatoes with a spoon.
Layering and Baking

Assemble the Lasagna
Preheat your oven to 180°C (350°F). In a baking dish, spread a layer of pomodoro sauce on the bottom. Place 3 lasagna sheets over the sauce, followed by a layer of ragu, grated pecorino, and shredded mozzarella. Repeat this layering process until all ingredients are used, finishing with a layer of cheese on top.

Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly. Let it rest for 10 minutes before slicing.
