Creamy Cajun Sauce

Prepare the Sauce
In a medium bowl, combine mayonnaise, sour cream, cajun seasoning, garlic powder, lemon juice, salt, and black pepper. Mix well until smooth and creamy.

Slice the Onion
Peel the onion and slice it into 1/2 inch thick rings. Separate the rings and set aside.

Prepare the Batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, and salt. Gradually add the cold water, stirring until the batter is smooth and thick.

Fry the Onion Rings
Heat vegetable oil in a deep frying pan over medium-high heat (about 350°F or 175°C). Dip each onion ring into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

Place a generous amount of creamy cajun sauce on a plate. Top with two onion rings and garnish with dill pickle slices. Serve immediately.
