Preparation

    Prepare the Meat

    Choose between chicken breast or ground beef. If using chicken, cut into bite-sized pieces. If using ground beef, ensure it's crumbled and free of lumps.

    Chop the Vegetables

    Dice the onion, slice the green bell pepper, chop the mushrooms, and dice the tomatoes.

Cooking

    Sauté the Meat

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken or ground beef and season with salt, pepper, garlic powder, and chili powder. Cook until the meat is browned and fully cooked (about 6-8 minutes for chicken, 8-10 minutes for ground beef). Remove from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion, green bell pepper, and mushrooms. Sauté for about 5 minutes until the vegetables are softened. Add the diced tomatoes and cook for an additional 3 minutes.

    Combine and Add Cheese

    Return the cooked meat to the skillet with the vegetables. Stir to combine and sprinkle the cheddar cheese on top. Cover the skillet and let it cook on low heat for about 2-3 minutes until the cheese is melted.

Serving

    Plate the Dish

    Serve the southwestern mixture hot, garnished with additional diced tomatoes or fresh herbs if desired.
