Shrimp Preparation

Prepare the Breading
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Mix well.

Coat the Shrimp
Dip each shrimp into the wet mixture, then dredge in the dry mixture until fully coated. Set aside on a plate.
Frying Shrimp

Heat the Oil
In a large heavy-bottomed pot, heat 2 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Carefully add the shrimp in batches to the hot oil, frying for about 3-4 minutes or until they are golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Prepare the Potatoes
Peel the russet potatoes and cut them into evenly sized sticks (about 1/4 inch thick). Soak in cold water for at least 30 minutes to remove excess starch.

Mix the Coleslaw
In a large mixing bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, and salt. Toss until well combined. Refrigerate for at least 30 minutes before serving.
Serving the Dish

On a large serving plate, arrange the fried shrimp and french fries. Serve with a side of coleslaw or cottage cheese, based on your preference.
